Mozilla, very good browser. Particularly its lightweight incarnation Phoenix, my personal favourite.
Verse, networking protocol for 3D. Kind of difficult to put into words. Its original authors Emil Brink and Eskil Steenberg make a better job at it right here.
Native win32 ports of GNU tools. diff, patch, wget, the works. All win32 native, no funky DLLs. Precious stuff if you are into MS Windows but like to contribute to OSS projects.
The recently GPL'ed Blender 3D modelling software. Supports multiple platforms. It features: python scripting, quite a productive interface and all the whizzbang of a modern modeller. Not quite up to snuff in a few areas, but it's improving.
Most software produced by the Jakarta Project is absolutely fantastic. Most Java developers around use software from Jakarta at one time or another. Things like Ant, Log4J, Struts, Tomcat and Velocity are the Java developer's darlings.
